Serves: 4
Prep time: 15 min
Total time: 25 min

YOU’LL NEED:

4 peaches, halved and pits removed
1 3/4 cups heavy whipping cream
3 tablespoons honey
1 tablespoon melted unsalted butter
1 teaspoon vanilla extract
1/2 teaspoon fresh or ground ginger
Pinch of salt

LET’S DO IT!

  • Preheat the grill to medium high heat. Make sure the grill is clean, otherwise the peaches may get some funky flavors. Brush a little melted butter on the exposed surface of the peach halves. *Note: if you don’t have a grill, you can also broil the peaches face up on high for 4 - 6 minutes.

  • To prepare the whipped cream, use a stand mixer or a hand mixer fitted with the whisk attachment to whip the heavy cream on high for 2- 3 minutes until stiff peaks form. Add the honey, ginger, vanilla and a pinch of salt and whip on high for another 1 - 2 minutes.

  • To grill the peaches, place them exposed side on the preheated grill and cook for 4 - 6 minutes until they are warm and marked from the grill grates.

  • To serve, scoop a dollop of whipped cream into the cavity where the peach pit was.
