This is my go-to side dish from essentially October through April. I love it because cinnamon butter is the bomb, but also because the delicata squash has a such a thin skin that you don’t have to remove it, making this a very no-fuss recipe. It’s an impressive side dish for Thanksgiving, Christmas or any occasion!

You’ll need:
I medium to large sized delicata squash, cut in half lengthwise, seeds removed and cut into half moons
3 tablespoons melted butter
2 teaspoons cinnamon
1 teaspoon ground chipotle pepper (or subsititute paprika if you want a smoky flavor without spice)
1/2 teaspoon salt
Let’s do it!
- Preheat oven to 400°
- In a small bowl, combine melted butter, cinnamon, chipotle pepper and salt.
- Distribute delicata squash sections evenly in one layer in a large baking dish and then drizzle the melted butter mixture evenly over the squash.
- Roast for 30 - 40 minutes, flipping the squash halfway through roasting time.
