I am 0% German but 100% invested in celebrating Oktoberfest specifically because of all of the amazing dishes like this Beer Cheese Dip that are associated with it. It’s one of my all time most made recipes.
This dip is awesome with soft pretzels, crackers or poured over hot dogs and is a staple at any Oktoberfest gathering. Or just make it for yourself because you really won’t want to share :)

You’ll need:
1 bottle light, amber or pumpkin ale
8 oz. cream cheese, cut into cubes
16 oz. extra sharp cheddar cheese, shredded
1 teaspoon Dijon mustard
1/2 teaspoon paprika
Let’s do it!

In a saucepan over medium high heat, bring the beer to a simmer (should take 2 - 3 minutes).

Whisk in the cream cheese, cheddar cheese, mustard and paprika until the mixture is smooth.

Reduce the heat and simmer on medium low for 10 - 12 minutes, stirring often until the mixture is noticeably thicker.

Remove from the heat, transfer to a heat save serving bowl and serve warm with pretzels or crackers.
