LAVENDER LEMONADE BELLINI

This lavender lemonade is just the most refreshing and soothing drink if I do say so myself. I love it on its own, or topped with Prosecco in this recipe to make it a bellini. You could also use it as the base for any other cocktails with vodka, gin or make it a mocktail with sparkling water. The possibilities are endless and they’re all delightful.

Serves: 4- 6
Total time: 1 hour

You’ll need:
2 cups lemon juice  (about 10 lemons)
1 1/3  cups granulated sugar
7 cups water
2 tablespoons dried or fresh lavender buds
1 750 ml bottle Prosecco (or another favorite sparkling wine)

Let’s do it!

  • First, prepare the lavender syrup by heating the sugar and 1 cup of the water in a medium saucepan over medium heat for 5 - 7 minutes, or until sugar has fully dissolved. Remove from heat, add lavender and stir gently. Let stand for 1 hour to steep the flavor from the lavender, then pour through a mesh sieve and transfer to the refrigerator.

  • In the meantime, squeeze your lemons to yield approximately 2 cups of lemon juice. It’s okay if it’s a little more or less.

  • In a large pitcher, combine the lemon juice with 6 cups of water and the lavender syrup. Stir briskly to incorporate the syrup into the lemonade. You can totally drink this on its own at this point as a lavender lemonade!

  • To serve the bellinis, fill your champagne flutes (or another festive glass) with a ratio of 1 part Prosecco to 2 parts lemonade. Cheers!
