You’ll need:
1 Quart or 32oz. Of strawberries, sliced
2 cups heavy whipping cream
1 cup greek yogurt or vanilla greek yogurt
1/3 cup sugar
2 teaspoons vanilla extract
Juice of half of a lemon (1/8 cup lemon juice)
Let’s do it!
-
In a medium pot, combine strawberries, sugar, and lemon juice. Cook for 6-8 minutes. Use a wooden spoon to mash the strawberries as they cook to create a sauce like consistency.
-
Remove from heat, transfer to a clean bowl, and place in freezer for 10-15 minutes to chill briefly.
-
While the strawberry sauce is chilling, using a stand mixer with the whisk attachment or a hand mixer, whip the heavy cream until stiff. Pro tip: chill your mixing bowl before whipping the cream to make it go quicker!
-
Add the vanilla extract and whip again briefly to combine.
-
Fold in the greek yogurt, vanilla, and the cooked strawberry sauce with a rubber spatula or wooden spoon just to combine. You don’t want to overmix it and deflate the whipped cream.
-
Pour into a freezer safe glass or plastic container and freeze for at least 2 hours.
-
Have fun adding toppings to your fro-yo to serve such as graham cracker crumbles, chocolate chips or candy.
Note: this froyo would also make great popsicles if you have a popsicle mold.
