Toss these balsamic marinated strawberries on any type of greens- spinach, arugula, anything you like- and you have a simple, stellar salad. I like to incorporate micro greens like pea shoots or sunflower greens because they have lots of nutty flavor. You could even serve this salad atop a crostini for an easy appetizer!
Serves: 4 - 6

3 - 4 cups spinach or other greens of your choice
3/4 cup chopped strawberries
4- 6 oz. goat cheese
4 tablespoons balsamic vinegar
1 teaspoon honey
1/4 cup basil chiffonade (add other herbs like parsley too if you like)
1/2 teaspoon salt
1/2 teaspoon cracked black pepper
Let's do it!

Combine strawberries, balsamic vinegar, honey, salt and pepper in a small bowl and set in the fridge for at least 30 minutes to marinate.

Combine spinach and basil then distribute evenly among each individual plate.

Top with goat cheese and the marinated strawberries.

Drizzle any of the remaining balsamic vinegar mixture as dressing over the salads.
Note: If you're only making one or two portions of salad, leave the marinated strawberries separate from the greens to store until you're ready to serve so as not to let greens get soggy.
