This Whipped Feta and Grilled Zucchini Dip is a go-to way for me to use up zucchini because it is so versatile. You can serve it up traditionally with crackers or crostini. You could spread it on a sandwich or a burger. You could even make a super delicious kind of mac’n’cheese by stirring it into pasta (I like it with orchiette or macaroni). If you haven’t tried the viral feta pasta yet, then I highly recommend the latter option, it is just that good. You could even double down on the grilled zucchini by serving it on top of zucchini!

You’ll need:
8 oz or about 1 cup crumbled feta
1/4 cup plain greek yogurt or sour cream
2 small- medium zucchini , sliced
Juice of 1/2 lemon
3 - 4 tablespoons fresh dill, minced
Olive oil, salt + pepper

Preheat the grill to about 425-450 degrees. Lightly drizzle zucchini slices with olive oil, salt + pepper. Alternatively you can use a cast iron skillet over high heat or broil the zucchini in the oven on high for 6 - 12 minutes.

Grill about 5 minutes per side or until slightly charred. Set aside and dice into small sections once it is cool enough to be able to touch.

While zucchini is grilling, whip feta and greek yogurt using a stand or hand mixer with the whisk attachment until noticeably fluffy. Add lemon juice, dill and a little bit of olive oil. Stir to incorporate.

Finally, stir the sliced, grilled zucchini into the dip and serve!
