YOU’LL NEED:
1.5 lbs salmon (2 large filets or 4 medium filets)
1 small zucchini, cut into half moons
1 small summer squash, cut into half moons
1 shallot,, thinly sliced
1 medium lemon, thinly sliced
4 sprigs fresh thyme
2 tablespoons butter
Parchment paper
Salt and pepper
LET’S DO IT!

Preheat the oven to 450 degrees.

Cut 4, 15’’ square pieces of parchment paper and fold each half to crease.

Divide sliced zucchini, squash, and shallots into 4 portions and place on one half of each of the 4 pieces of parchment paper.

Place 1/2 tablespoon of butter on top of veggies, then place salmon on top of the pile.

Top salmon with a few lemon slices, a sprig of thyme, salt and pepper to taste.

Fold paper over contents, pleat edges to seal, forming a half moon shape.

Bake packets on baking sheet for 20 minutes.

To serve, cut the pocket open and serve right away in the paper to make for easy clean up!
